• Doug’s Stuffed Breakfast Bell Peppers

  • Ingredients:

    • 1lb Doug’s Grass Fed Ground Beef
    • 4 red or green bell peppers
    • 8 oz fresh spinach chopped
    • 4 eggs large
    • Sea salt and pepper


    1. Preheat oven to 400F. Line a square glass baking dish with foil.
    2. Cut off the top of each pepper, and remove the seeds. Place peppers into the dish, and bake for about 15 minutes.
    3. Brown 1lb of hamburger in pan and season with salt and pepper.
    4. Meanwhile, rinse the spinach. Pat spinach dry with a paper towel then chop into small pieces.
    5. Remove peppers from oven and stuff the bottoms evenly with the fresh spinach.
    6. Stuff bell pepper with ground beef, leaving 1/2″ space at the top
    7. Crack an egg into the top ½” of each pepper.
    8. Bake for about 15-20 minutes or until the egg whites are set and not transparent.

    Tip: Top with cheese and salsa for a little extra kick!
