    7-8 Doug’s Jumbo carrots
    4 tablespoons avocado or olive oil
    1 tablespoon dried basil
    6 cloves garlic
    1 1/2 teaspoon sea salt
    1 tablespoon chopped fresh parsley or dried parsley for garnish


    1. Preheat oven to 375 degrees. Scrub carrots clean and dry with paper towel.
    2. Combine oil, basil, garlic and salt. Pour over dried carrots and gently stir to combine (directly on the cooking sheet).
    3. Spread the carrots out in a single layer.
    4. Bake for 35 minutes. Turn oven to off and set on low broil for 4-5 minutes. Watch those carrots closely as they can burn quickly.
    5. Garnish with parsley and serve.
